For another month, the Roca brothers have selected the best seasonal products for the shipments of 'Sustainable Gastronomy', a project promoted by BBVA to promote healthy cooking and to give visibility to small producers throughout Spain.
In November, subscribers to the initiative will receive at their homes beef meat from León, turnips from Talltendre (Lérida), saucer onions and trumpets of death from Girona, sweet potatoes from Almería, Valencian oranges and mandarins and a DO Jumilla wine (Murcia ).The recipes proposed by Joan and Jordi Roca for these ingredients are a stew with the ox llata and a dessert with roasted sweet potatoes and citrus granita.

“Citrus fruits are very good at this time, especially to prevent colds.
It will come in handy for us to prepare a recipe with sweet potatoes, a product that also coincides with the season, ”explains Joan Roca.The chef of El Celler de Can Roca, together with his brother Jordi Roca, has thought of a preparation for cooking from home with these elements in an easy way and taking out their full potential.
The oranges and mandarins come from Naranjas Lola, a family business located in Cullera (Valencia), while the sweet potatoes are provided by the Unica Fresh cooperative from Almeria.For the main dish, the Roca brothers wanted to give prominence to beef.
"It is a very particular piece, the llata or llana, a cut from the ox's back, animals raised on the El Capricho farm in León," he says.Turnips from the producer Francesc Baldó, onions from Can Garús (Girona) and 'Craterellus cornucopioides' mushrooms, better known as trumpets of death, complete the recipe, thanks to various collectors in the province of Girona.
For his part, Josep Roca, sommelier at El Celler de Can Roca, has selected a DO Jumilla wine to accompany the shipment.“José María Vicente is the person who from his Casa Castillo has inspired a generation of young winemakers through his work in the vineyard and in the winery,” says Josep.A bottle of Vino de Finca 2018 that offers "a jovial wine, of terroir and light, carrier of freshness and elegance", in the words of the sommelier.
